Saute the pepper and onion slices in about two table spoons of extra virgin olive oil.
You will need some chicken for this recipe. I am vegetarian, so I use this type of chicken substitute. There are many different types of vegetarian chicken you can choose from, use which ever type is your favorite!
Add the chicken to the peppers and onions and cover the skillet. When the peppers and onions become soft and get some golden edges, stir the mixture. Try to saute everything long enough to get some golden edges on the chicken, too.

1 16 oz. block silken or soft tofu
1 tsp. salt
1/3 cup lemon juice
1 TB extra virgin olive oil
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. seasoned salt
2 cups soy milk (or non-sweetened milk of your choice)
1 TB nutritional flakes
1 TB parsley
Heat the vegan alfredo in a medium sauce pan.Meanwhile, put some fettuccine noodles into boiling water. Bring the noodles to a boil. Boil for 2 minutes, then remove from the burner, cover and let stand for 10 minutes. Using this formula you will have perfect noodles every time! But, don't try that formula with angel hair pasta, because it cooks super fast. To serve the Vegetarian Chicken Alfredo, you will start with a bed of noodles, then pour the alfredo over them, next use tongs to grab a generous amount of the peppers, onions, and veggie chicken and place it on top! Delicious!For a side dish, I chose to serve some steamed cauliflower. You can serve any vegetable you have available. We also heated some Honey Whole Wheat rolls to eat with our Vegetarian Chicken Alfredo!
